Chef Michael J. McGreal has worked in the foodservice industry for more than 36 years. He began his career as a foodservice and banquet chef for Northern Illinois University. Then, he went on to hold positions at some of Chicago's premier restaurants and hotels. McGreal joined the Joliet Junior College Culinary Arts Department in 1996 and has served as chair since 1999.
McGreal is a chef consultant for the USDA’s Institute of Child Nutrition (ICN) and a chef trainer for Culinary Nutrition Associates, LLC. In this capacity, he conducts trainings related to the Healthy Schools Initiative for foodservice professionals around the country. He was recently appointed to the Culinary Training and Education National Advisory Board. This program is a collaboration between the USDA and ICN.
From 2010 to 2016, he served on former First Lady Michelle Obama’s National Advisory Council for the Chefs Move to Schools Initiative. Additionally, he served as a presenter and motivational speaker for many local and national conferences and professional organizations.
McGreal has earned many honors, including the American Culinary Federation Presidential Medallion in 2011; the 2009 Postsecondary Educator of the Year Award from the Foodservice Educators Network International; the Illinois Federation of Teachers Everyday Hero Award; and the Professional Achievement Award from the University of St. Francis.
McGreal has authored and co-authored four books including: Culinary Arts Principles and Applications; Culinary Math Principles and Applications; 50 Effective Knife Techniques; and The National Apprenticeship Training Program for Cooks.
McGreal has a true passion for culinary education and training. “Seeing the transformation in each student from the moment they begin in the Culinary Arts or Culinary Management programs at JJC to the day of their graduation is nothing short of inspiring," he said.
